Avocado Sago is a deliciously creamy and refreshing dessert drink made with ripe avocado, chewy tapioca pearls, milk, and a touch of sweetness. Popular in Filipino-inspired dessert preparations, this satisfying treat combines the smooth, buttery texture of avocado with the soft, chewy bite of sago pearls. Served chilled, it is perfect for warm afternoons, summer gatherings, or whenever you crave a cool and comforting dessert.
Ripe avocado creates a naturally rich base, while milk and condensed milk add a smooth, sweet creaminess. Small tapioca pearls provide a delightful chewy texture in every spoonful, and a little vanilla enhances the flavor. The ingredients can be blended together for a smooth drink or gently mixed to keep some avocado pieces for extra texture.
Avocado Sago is easy to prepare at home with a few simple ingredients. Cook the tapioca pearls until translucent, combine them with the creamy avocado mixture, and refrigerate until chilled. Serve in glasses or dessert bowls for a refreshing tropical treat.
Cooking Method
- Bring a saucepan of water to a boil.
- Add the tapioca pearls and cook according to the package directions, stirring occasionally to prevent sticking.
- Once the pearls become mostly translucent, turn off the heat and cover for 5–10 minutes if needed.
- Drain the pearls and rinse them under cool water until no longer hot.
- Cut the avocados in half, remove the pits, and scoop the flesh into a blender.
- Add the chilled milk, condensed milk, and vanilla extract.
- Blend until smooth and creamy.
- Taste and add sugar if extra sweetness is desired.
- Transfer the avocado mixture to a large bowl and stir in the cooked tapioca pearls.
- Refrigerate for 20–30 minutes or until thoroughly chilled.
- Add ice cubes just before serving and mix gently.
- Serve cold in glasses or dessert bowls.
