Mexican Corn Tortillas are traditional thin, round flatbreads made from masa harina (corn flour) and water. They are a staple of Mexican cuisine and are widely used to prepare tacos, enchiladas, quesadillas, tostadas, and other delicious dishes. These tortillas have a slightly earthy corn flavour, soft texture, and flexible structure when freshly cooked. Naturally gluten-free when made with pure masa harina, they are perfect for wrapping vegetables, beans, chicken, beef, and other favourite fillings.
Cooking Method
- Prepare the Dough: In a large mixing bowl, combine masa harina and salt.
- Add Water: Gradually add warm water while mixing until a soft dough forms.
- Knead Well: Knead for 2–3 minutes until the dough becomes smooth, soft, and easy to shape. Add a little more water if it feels dry.
- Rest the Dough: Cover the dough with a damp kitchen towel and let it rest for 15–20 minutes.
- Divide into Balls: Divide the dough into 10–12 equal portions and roll each portion into a smooth ball.
- Press the Tortillas: Place each dough ball between two sheets of plastic or parchment paper and press using a tortilla press or rolling pin into a thin, round tortilla.
- Heat the Pan: Preheat a dry cast-iron skillet or non-stick pan over medium-high heat.
- Cook the Tortillas: Place one tortilla on the hot pan and cook for approximately 30–45 seconds. Flip and cook the other side for another 30–45 seconds. Flip once more briefly if needed.
- Keep Them Soft: Transfer the cooked tortillas to a clean kitchen towel and cover them to retain moisture and softness.
- Serve: Enjoy warm with tacos, enchiladas, quesadillas, beans, vegetables, or your favourite Mexican fillings.
