Traditional Khatta Dhokla is a classic Gujarati steamed snack made from fermented rice and lentils. Unlike instant dhokla varieties, this authentic recipe relies on natural fermentation to develop its distinctive sour flavour and soft, airy texture. The combination of rice and urad dal creates a smooth, slightly grainy batter that becomes light and fluffy after steaming.
This traditional vegetarian dish is enjoyed for breakfast, evening snacks, or as part of a Gujarati meal. Its naturally tangy taste is balanced with ginger, green chillies, and a fragrant tempering of mustard seeds, sesame seeds, and curry leaves. Served with green chutney or garlic chutney, Khatta Dhokla offers a delicious taste of traditional Gujarati home cooking.
Cooking Method
- Wash and Soak: Rinse the rice and urad dal thoroughly. Soak them separately in water for 4–5 hours.
- Grind the Ingredients: Drain the water and grind the rice and urad dal separately or together into a slightly coarse, thick batter. Add a little water if necessary.
- Combine the Batter: Transfer the mixture to a large bowl. Add yogurt, salt, ginger, and green chilli. Mix well.
- Ferment: Cover the bowl and leave the batter in a warm place for 8–10 hours or overnight until it becomes airy and slightly sour.
- Prepare for Steaming: Gently stir the fermented batter. Add turmeric and lemon juice if desired. Pour it into a greased steaming tray.
- Steam the Dhokla: Steam for 20–25 minutes or until a toothpick inserted in the centre comes out clean.
- Prepare Tempering: Heat oil in a small pan. Add mustard seeds and sesame seeds. Once they crackle, add curry leaves and slit green chillies.
- Finish the Dhokla: Pour the tempering evenly over the steamed dhokla.
- Garnish and Serve: Allow it to cool slightly, cut into squares, and garnish with fresh coriander. Serve with green chutney.
