Ragi Savory Dhokla is a delicious Indian steamed snack prepared with ragi flour (finger millet), gram flour, yogurt, and a blend of aromatic spices. It has a soft, spongy texture with a slightly earthy flavour from ragi and a pleasant tanginess from yogurt and lemon juice. Fresh vegetables such as carrots and capsicum can be added to make it more colourful and flavourful.
This wholesome vegetarian dish is a lovely option for breakfast, evening snacks, or a light meal. The batter is made with simple ingredients and steamed until fluffy, then finished with a fragrant tempering of mustard seeds, sesame seeds, curry leaves, and green chillies. Serve it warm with green chutney or tamarind chutney for a satisfying snack.
Cooking Method
- Prepare the Batter: In a large bowl, combine ragi flour, gram flour, yogurt, water, turmeric, sugar, salt, ginger, green chilli, and lemon juice. Mix until smooth.
- Add Vegetables: Stir in the grated carrot and finely chopped capsicum, if using.
- Rest the Batter: Allow the batter to rest for 10 minutes so the flours absorb the moisture.
- Add Fruit Salt: Just before steaming, add Eno fruit salt and gently mix until combined.
- Steam the Dhokla: Pour the batter into a greased steaming tray. Steam for 20–25 minutes or until a toothpick inserted in the centre comes out clean.
- Prepare Tempering: Heat oil in a small pan. Add mustard seeds and sesame seeds. Once they begin to crackle, add curry leaves and slit green chillies.
- Season: Add water and lemon juice to the tempering and bring it to a gentle simmer.
- Finish and Serve: Pour the tempering evenly over the steamed dhokla. Let it cool slightly, cut into squares, garnish with coriander leaves, and serve.
