Sprouts Matar Handvo is a wholesome variation of traditional Gujarati handvo, prepared with mixed sprouts, green peas, semolina, yogurt, and aromatic Indian spices. The combination of sprouted lentils and green peas creates a satisfying texture, while ginger, green chillies, and fresh coriander add a delicious savoury flavour. A light tanginess from yogurt and lemon juice balances the natural earthiness of the sprouts.
This nutritious vegetarian savoury cake is ideal for breakfast, evening snacks, or a light lunch. The batter is seasoned with traditional spices and finished with a crunchy tempering of mustard seeds, sesame seeds, and curry leaves. Baking gives the handvo a golden, crispy exterior while keeping the inside soft and moist. Serve warm with green chutney, tamarind chutney, or plain yogurt.
Cooking Method
- Prepare the Sprouts: Wash the mixed sprouts and lightly steam them for 5–7 minutes until slightly tender. Allow them to cool.
- Prepare the Peas: Lightly mash half of the green peas and keep the remaining peas whole for texture.
- Mix the Batter: In a large bowl, combine semolina, gram flour, yogurt, and water. Mix until smooth.
- Add Vegetables: Add the sprouts, green peas, grated carrot, ginger, green chilli, and chopped coriander.
- Season the Mixture: Add turmeric, cumin powder, sugar, salt, and lemon juice. Mix thoroughly.
- Rest the Batter: Allow the mixture to rest for 15 minutes so the semolina absorbs moisture. Adjust the consistency with a little water if needed.
- Prepare Tempering: Heat oil in a small pan. Add mustard seeds and sesame seeds. Once they crackle, add curry leaves and asafoetida.
- Combine: Pour the tempering into the batter and mix gently, reserving a little for the top.
- Add Fruit Salt: Just before baking, gently fold in Eno fruit salt.
- Bake the Handvo: Transfer the batter into a greased baking dish. Sprinkle the reserved tempering over the top. Bake in a preheated oven at 180°C (350°F) for 25–30 minutes until golden and cooked through.
- Cool and Serve: Allow the handvo to cool slightly, cut into slices, and garnish with fresh coriander. Serve warm with chutney.
