Oats Palak Handvo is a nutritious twist on the traditional Gujarati savoury cake, prepared with oats, fresh spinach, yogurt, and a combination of vegetables and spices. It offers a delicious balance of earthy spinach, nutty oats, and mild tanginess from yogurt. Grated carrots, green peas, and fresh herbs add colour, texture, and extra flavour to every slice.
This wholesome vegetarian dish is perfect for breakfast, evening snacks, or a light lunch. The batter is seasoned with ginger, green chillies, turmeric, and traditional spices before being baked or cooked until golden on the outside and soft inside. A crunchy tempering of mustard seeds and sesame seeds gives it an authentic Gujarati touch. Serve warm with green chutney or plain yogurt.
Cooking Method
- Prepare the Oats: Grind the rolled oats into a coarse or fine flour using a blender.
- Prepare the Vegetables: Wash and finely chop the spinach. Grate the carrot and prepare the green peas, ginger, and green chilli.
- Mix the Batter: In a large bowl, combine oats flour, semolina, yogurt, and a little water. Mix until you get a thick batter.
- Add Vegetables and Spices: Add spinach, carrot, green peas, ginger, green chilli, turmeric, cumin powder, sugar, salt, and lemon juice. Mix thoroughly.
- Rest the Batter: Allow the mixture to rest for 15 minutes so the oats and semolina absorb moisture. Add a little water if needed.
- Prepare Tempering: Heat oil in a small pan. Add mustard seeds, sesame seeds, and curry leaves. Stir until aromatic.
- Combine: Pour most of the tempering into the batter and mix gently. Reserve a little for the top.
- Add Fruit Salt: Just before baking, gently fold in the Eno fruit salt.
- Bake the Handvo: Transfer the batter into a greased baking dish. Sprinkle the remaining tempering over the top. Bake in a preheated oven at 180°C (350°F) for 25–30 minutes, or until golden and cooked through.
- Cool and Serve: Allow the handvo to cool slightly before cutting into slices. Serve warm with green chutney or yogurt.
