Sooji Veg Dhokla is a delicious and nutritious Indian steamed snack made with semolina (sooji), yogurt, and finely chopped vegetables. It has a soft, spongy texture with a mild tangy flavour and a pleasant combination of spices. Carrots, green peas, capsicum, and other vegetables add colour, freshness, and extra texture to every bite.
This easy-to-make vegetarian dhokla is perfect for breakfast, evening snacks, or a light meal. Unlike traditional fermented dhokla, this version uses fruit salt or Eno to create a fluffy texture without requiring a long fermentation process. A fragrant mustard seed and curry leaf tempering gives it an authentic Indian flavour. Serve warm with green chutney or tamarind chutney.
Cooking Method
- Prepare the Batter: In a mixing bowl, combine semolina, yogurt, water, salt, sugar, turmeric, and lemon juice. Mix until smooth.
- Add Vegetables: Stir in finely chopped carrots, capsicum, green peas, ginger, and green chilli.
- Rest the Batter: Allow the mixture to rest for 10 minutes so the semolina can absorb moisture. Add a little water if the batter becomes too thick.
- Add Fruit Salt: Just before steaming, gently mix in Eno or fruit salt.
- Steam the Dhokla: Pour the batter into a greased steaming tray. Steam for 15–20 minutes or until a toothpick inserted in the centre comes out clean.
- Prepare Tempering: Heat oil in a small pan. Add mustard seeds, sesame seeds, curry leaves, and green chillies. Allow them to crackle.
- Add Tempering: Pour the tempering evenly over the steamed dhokla.
- Garnish and Serve: Let it cool slightly, cut into squares, and garnish with fresh coriander leaves. Serve with chutney.
