Baked Veg Handvo is a traditional Gujarati savoury cake prepared with a nutritious mixture of rice, lentils, fresh vegetables, and aromatic Indian spices. This delicious vegetarian dish combines the earthy flavour of lentils with grated bottle gourd, carrots, and green peas. A touch of yogurt adds natural tanginess, while ginger, green chillies, turmeric, and cumin create a wonderful balance of flavours.
Unlike pan-fried versions, this baked variation develops a beautifully golden and slightly crispy exterior while remaining soft and moist inside. A fragrant tempering of mustard seeds, sesame seeds, and curry leaves adds an authentic Gujarati touch. Serve it warm with green chutney, yogurt, or your favourite dipping sauce for a satisfying breakfast, evening snack, or light meal.
Cooking Method
- Wash the rice and lentils thoroughly and soak them in water for 4–5 hours.
- Drain the water and grind the mixture into a slightly coarse batter using a little water.
- Transfer the batter to a large bowl and mix in yogurt.
- Cover and allow it to ferment for approximately 4 hours in a warm place.
- Add grated bottle gourd, carrots, green peas, ginger, green chillies, turmeric, cumin, sugar, and salt.
- Mix everything until the vegetables and spices are evenly distributed.
- Preheat the oven to 180°C (350°F) and grease a baking dish.
- Add lemon juice to the batter, followed by baking soda, and gently mix.
- Heat oil in a small pan and add mustard seeds, sesame seeds, and curry leaves.
- Pour the tempering over the batter and mix lightly.
- Transfer the mixture into the prepared baking dish.
- Bake for 35–40 minutes or until the top becomes golden brown and a toothpick inserted into the centre comes out clean.
- Allow it to cool slightly, cut into squares, and serve warm.
