Pamonha is a traditional Brazilian corn-based dish, especially popular in the rural regions of Brazil. It is prepared using fresh sweet corn kernels blended into a smooth mixture with milk, sugar, and butter. The mixture is wrapped in fresh corn husks and gently boiled until firm and tender, creating a delicious steamed or boiled corn cake with a naturally sweet flavour.
This beloved Brazilian specialty is commonly enjoyed during traditional June festivals, family gatherings, and everyday snack times. Pamonha can be prepared in both sweet and savoury versions, with ingredients such as cheese, coconut milk, or salt added according to preference. Its soft texture and rich corn flavour make it a comforting homemade treat that can be served warm or chilled.
Cooking Method
- Prepare the Corn: Remove the husks from fresh corn and carefully separate the kernels from the cobs. Keep several large, clean husks for wrapping.
- Blend the Mixture: Place the corn kernels in a blender with milk. Blend until smooth and creamy.
- Add Seasonings: Add sugar, melted butter, and salt. Blend briefly until everything is well combined.
- Prepare the Wrappers: Clean the corn husks thoroughly and briefly blanch them in hot water to make them flexible. Allow them to cool.
- Fill the Husks: Arrange two corn husks together to create a pouch. Spoon the corn mixture inside, leaving enough room to fold and secure the top.
- Secure the Packages: Fold the husks carefully and tie them securely with kitchen string or thin strips of husk.
- Cook the Pamonha: Place the wrapped parcels in a large pot of boiling water. Simmer for approximately 50–60 minutes until the filling becomes firm.
- Cool Slightly: Carefully remove the parcels and allow them to cool for a few minutes.
- Serve: Unwrap the Pamonha and enjoy warm or chilled as a traditional Brazilian corn treat.
