Cooking Method
  •  Preheat your oven to 180°C (350°F) and line a jelly roll pan with parchment paper.
  • In a bowl, beat eggs and sugar until pale and fluffy.
  • Sift together flour, cocoa powder, and a pinch of salt, then fold gently into the egg mixture.
  • Pour the batter evenly into the prepared pan and smooth the surface. Bake for 10–12 minutes until springy to touch.
  • Immediately turn the cake onto a clean kitchen towel sprinkled with sugar, peel off the parchment, and roll the cake with the towel. Let it cool completely.
  • Unroll the cooled cake and spread your choice of filling (buttercream, whipped cream, or ganache) evenly.
  • Roll the cake tightly again without the towel, slice, and serve. Optionally dust with powdered sugar or drizzle with chocolate.
